Recipe: Sausage Pasta with Rockabilly Red

Rock a weeknight with this fast and fresh meal!

Fresh pasta is usually available in the refrigerated deli section of the supermarket. Chicken sausage links are pre-cooked, helping to get this dish on the table fast.

Rockabilly Red is a weekday favourite and goes well with this hearty pasta.

Serves 3-4


Kosher Salt

1T Extra Virgin Olive Oil

¾ lb Italian Chicken sausage, cut into 1-inch pieces

½ lb fresh mushrooms sliced (use a selection of types for more flavour)

4 medium scallions (white & green parts) thinly sliced

2 t chopped fresh rosemary

Pinch of red pepper flakes

Freshly ground black pepper

1C drained canned diced tomatoes

1C chicken broth

1 12oz package fresh pasta (linguine or fettuccine)

¾ C freshly grated Parmesan cheese


STEP 1: Boil plenty of water salted like the sea.

STEP 2: Heat oil in a large, heavy pan over medium-high heat. Add the sausage and cook until browned, stirring as needed. (around 3 min)

STEP 3: Add mushrooms, scallions, rosemary, red pepper flakes, ¾ t salt, and ½ t pepper. Stir often until mushrooms start to brown (around 3 min)

STEP 4: Add the tomatoes and chicken broth, bring to a boil, then cover and reduce to a simmer. Cook until the sausage is heated through and flavours are melded. (around 5 min)

STEP 5: Meanwhile, cook the pasta according to package directions. Drain well and add to the sauce, along with ½ the Parmesan. Toss for 1 minute over medium heat.

STEP 6: Plate the pasta and sprinkle with the remaining Parmesan and black pepper. Serve hot!
