
Recipe: Tourtière with Oliver Twist Estate Winery Malbec
This year, we had the pleasure to work with Catherine Côté Martel, from Montréal but native to Lac Saint-Jean, a place known for its Tourtière. She shared this recipe with us, perfect for the winter.
Tourtière, a hearty meat pie, originates in Quebec where they know how to keep warm in cold weather! Try this filling, tasty dish with our full-bodied Malbec.

Ingredients:
2 lbs (1 kg) pork, cut into small cubes
2 lbs (1 kg) beef round steak, cut into small cubes
3 large onions, chopped
5 lbs (2.5 kg) potatoes, peeled and diced
2 large rolled-out shortcrust pastry
Salt and pepper
Chicken broth
Method:
STEP 1: Preheat the oven to 400°F.
STEP 2: In a large bowl, combine the meat, onions, and potatoes. Season with salt and pepper.
STEP 3: Line the bottom and sides of a large pot or roasting pan (Slightly larger than 23×13-cm / 9×5-inch) with one pie crust.
STEP 4: Add the meat and potato mixture. Add enough chicken broth to cover the meat. Cover with the second pie crust. Cover with foil and bake for about 1 hour or until the filling starts to boil.
STEP 5: Reduce the oven’s temperature to 325 °F and cook for about 3 hours. Add broth, as needed using a funnel through a hole in the top crust.
STEP 6: Reduce the oven’s temperature to 300 °F and cook for 1 to 2 hours.
